A Taste Of Thai, Pad Thai For Two, 9 oz (255 g)
Pour noodles into a bowl.
Cover with very hot tap water. Stir to separate. Soak noodles for 25-30 minutes. Do not over soak.
Pad Thai for two (serves 2-4)
4 Tbsp vegetable oil, divided
1 egg, beaten
1 packet Rice Noodles (enclosed), soaked as directed on box
4 scallions, chopped
1/3 cup coarsely chopped peanuts
1 packet Pad Thai Sauce (enclosed)
2 cups bean sprouts
Optional: 1/2 lb thinly sliced chicken (or raw shrimp or pork)
Optional: cilantro and lime wedges for garnish
Soak Noodles according to directions on side of box. Heat 2 tbsp oil in a wok or large skillet over medium-high heat. Add egg. Scramble lightly, about 20 seconds. (May add shrimp, pork or chicken, if desired, stir-fry until cooked through.) Add remaining vegetable oil. Add drained Rice Noodles. Stir-fry 4-7 minutes until firm but tender. Add scallions, peanuts, and Pad Thai Sauce. Stir-fry for about 1 minute. Stir in bean sprouts. Serve hot, garnished with cilantro and lime wedges.
Rice noodle ingredients: (Rice flour, water, modified tapioca starch).
Pad Thai sauce ingredients: Palm sugar, water, tamarind, shallot, sweet radish (sweet radish, salt, sugar, sodium benzoate (preservative)), garlic, soybean oil, potassium chloride, maltodextrin, miso (soybean, rice, salt), salt, hydrolyzed vegetable protein (soybeans, corn, maltodextrin), yeast extract, paprika oleoresin, citric acid, alpha-tocopherol (antioxidant), chili oleoresin.
