You’ll Need
2/3 cup vegetable oil
1 1/3 cups water
4 large eggs

Bakes

Two 8″-9″ round layers, 9″x13″ cake, 10-cup Bundt® cake, or 24 cupcakes
Preheat oven to 350ºF (325ºF if using glass or dark metal pans). Lightly grease two 8″ or 9″ round layer pans; one 9″x13″ pan; one 10-cup Bundt pan; or 24 cupcakes papers in muffin pans.
Whisk together oil, water, and eggs. Add mix and stir until smooth.
Bake until a cake tester inserted in center comes out clean, and top springs back when lightly pressed: 8″ layers (25 to 35 minutes), 9″ layers (20 to 28 minutes), 9″x13″ pan (24 to 28 minutes), 10-cup Bundt pan (45 to 48 minutes), or cupcakes (18 to 22 minutes).
Cool in pan for 10 minutes before turning out onto a rack to cool completely.

Cane sugar, rice flour, cocoa (processed with alkali), tapioca starch, emulsifier (rice starch, polyglycerol esters of fatty acids, mono-and diglycerides), baking powder (corn starch, baking soda, sodium acid pyrophosphate, monocalcium phosphate), salt, xanthan gum.
